Potato and egg salad:

Ingredients.

500g new potatoes.
salt.
4 eggs.
125g hard cheese.
sprig or 2 of parsley.

for extra flavour make a garlic dressing.
 

Method.

1. Scrub potatoes, removing any green patches and cook for 15 -20 minutes until
    soft.
2. In a separate pan boil the eggs for 12 minutes.
3. At this point it is a good time to make the garlic dressing:
    this is quiet simple as it is a combination - 4 tbs. olive oil
                                                                         1 tbs. white wine  vinegar
                                                                         salt and pepper.
                                                                         a small clove of garlic.
     simply, peel, chop and crush the garlic and add to french dressing.
    As this is for when there is very little money left, I'd advise that inside of
    buying these ingredients, most shops will have a similar dressing ready
    prepared.
4. Slice the eggs and potatoes as soon as they are cool enough, put into a bowl,
    and cover with the dressing.
5. Dice cheese and add to bowl.
6. wash parsley and just prior to serving add to salad and toss gently.
