PASTA
~ with tomato sauce.
Ingredients:
1 large tin of peeled chopped tomatoes.
1 medium onion.
2 -3 cloves of garlic.
1 tablespoon olive oil.
1 tablespoon tomato paste.
1/8 pint / 80 ml water.
salt and pepper.
a sprig of parsley.
How to do it:

1. Fry the onion in the oil over a gentle
heat until soft, add the garlic and continue frying until onions begin
to change colour.

2. Add the tomatoes, season with salt
and pepper and simmer for 10 minutes, dissolve the paste in the water and
add to pan. Continue cooking for 5 minutes or until sauce is thick and
smooth. finely chop parsley and add to pan.

3. Pour over cooked pasta and serve immediately.
~ with a basic meat sauce.
Ingredients:
4 good sized rashers of bacon.
1 medium onion.
3 cloves of garlic.
1 medium tin of peeled chopped tomatoes.
1 small carrot
1 tablespoon olive oil.
1lb/500g minced lean beef.
2 tablespoons tomato paste.
salt and pepper.
1/2 teaspoon dried mixed herbs.
small glass of red wine (optional) plus 1/2 pint/300ml
water or
3/4 pint/450ml water
1 tablespoon greek yoghurt.
How to make it:

1. Trim the rind off the bacon
and dice ( using scissors). Peel and finely chop the onion and garlic,
peel and dice the carrot.

2. Fry the onion and bacon
in the oil over a low heat, turning frequently until soft. Stir in the
carrot and garlic and fry for a further 5 minutes. Add the meat, season
lightly and continue frying until all the meat is brown with no raw pockets
where it has stuck in lumps.
